Speedy Snack Bars......  for hungry Mums and kids alike. 

This is one of those recipes you can throw together so quickly, using whatever you have on hand in the pantry - a great option to have while breastfeeding too, as the flax, oats and (optional) Brewer's Yeast will help to boost your supply. 

  • 2& 1/4C quick oats 

  • 1/4C ground flax seed 

  • 1/8C coconut oil (liquid measure - OR melted pure butter) 

  • 2/3C nut butter (peanut, almond etc  - OR if avoiding nuts try tahini or coconut butter) 

  • 1/2 C dried fruit (sultanas, raisins, chopped dried apricots or dates) 

  • 1/2C nuts or seeds 

  • 1/2C runny honey (or maple syrup/coconut syrup/rice syrup) 

  • 2t ground cinnamon (optional) 

  • 1TBrewer's Yeast (optional) 

  • 1t vanilla extract (optional) 

  • Good pinch of sea salt 

Line a loaf pan with baking paper.  Combine all ingredients and mix well - using wet hands press the mixture VERY firmly into the pan.  Pop in the fridge for at least a few hours to set.  Slice into bars/squares - store in the fridge.  If you don't like the idea of dried fruit, add extra nuts and/or chocolate chunks.
